Italy. Like so many people, we are touched by Italy's culture, its beautiful landscapes, its delicious food, and its luscious wines. Each year we spent our summer holidays in a different and different region of Italy, soaking up all the values of this wonderful landscape. Then, suddenly, we had the chance to start a new life. We decided to make Italy our new home. And Tuscany was one of them. We are big art fans, and the Renaissance is one of our favorite periods. So Florence was definitely our first choice for a new home. When we were renovating our house, we found a section in the basement where the old brickwork had to be replaced after the plaster had been knocked down. The old bricks had the inscription "degrassi" on them. At first we thought it was the name of a brick factory. But later it turned out that the name Degrassi was the name of a medieval family who lived here in the hills of Florence-Careggi. We started researching the name and the origin of the family. We found out who they were and what they did. We liked this name, and we thought that if it was possible, we would create our business under this name. During our research in the archives of Florence, we found a distant descendant, Aunt Giuseppina, 91 years old. We managed to reach an agreement to use the name, and we bought the name De'Grassi. In 2016 we created the De'Grassi company. Our company has several activities. First of all, we are involved in grape growing and olive oil production. The estate is located near San Polo in Chianti. The production area is south-south-west facing, with 50 hectares of vines and approximately 2,000 olive trees. Two varieties of grapes are grown on the estate: sangiovese and canaiolo, which are used to make the Chianti Classico wine. This is one of the most famous products of Italy and Tuscany. But at the mention of the word Chianti, you can immediately imagine the rolling hills and gentle slopes of Tuscany. Chianti is a cuvée wine, which is why it is made by blending several grape varieties. On the estate we continue the tradition of partly artisanal production, but of course the processes are already mechanised. The grapes harvested are processed in a winery with a larger capacity, using a reductive process. The aim of reductive vinification is to preserve the aromas and flavours of the grapes, which is carried out without oxidation. Wines produced using reductive treatment methods have a stronger aroma and flavour. They are light, fresh and mark eted when young. The colour of the wine remains lighter and clearer after treatment. Another product of the winery is vinegar. We produce a high quality and special Chianti balsamic vinegar that is different from the usual balsamic vinegar. It is worth tasting with a delicious salad and you will feel the difference. Cold pressed extra virgin olive oil is made from the fruit of the olive trees on the estate.
